Crockpot Homestyle Beef Stew

!±8± Crockpot Homestyle Beef Stew

The recipe below is the first one I made when I got my crock pot for Christmas 2 years ago. This stew recipe is for a 6 quart slow cooker. Depending on the size of your slow cooker, the amount of ingredients may vary.

INGREDIENTS

1 lb stew meat
1 pkg stew seasoning
3 pkg brown gravy mix
1 regular size pkg of mixed vegatables
3 beef bullion cubes
1 tsp Worchestire sauce
8 cups of water
1 Tbs flour
1 Tbs Butter
3 Medium Potatoes
Cooking oil
Cornstarch*
Onion and Garlic powder to taste*

TECHNIQUE

Step One: Coat a frying pan lightly with cooking oil. (You may also use cooking spray for less calories.) Place 1 lb stew meat in pan. Cook until brown. Meat does not need to be cooked all the way.*To save time, you can brown stew meat ahead of time. After browning, place in freezer. This will keep the meat fresh for a few months. If browning the meat the day before, place in refrigerator.

Step Two: Peel and Dice 5 potatoes. Place in your slow cooker along with the stew meat, gravy mix, stew seasoning, mixed vegatables, bulion cubes, worchestire sauce, onion powder, garlic powder, and water. Take flour and butter and mix in a small mixing bowl. Place mixture in the slow cooker. This will help the sauce thicken as your stew cooks.Turn the slow cooker on low. Cook 8-9 hours on low or 4-5 hours on high.

*If your stew is not as thick as you would like at the end of cooking time, take 1 Tbs of cornstarch and mix together with 1 Tbs of water. Place in slow cooker. Repeat the process until you reach the desired thickness.

Happy Hours in Austin

!±8± Happy Hours in Austin

Austin is a great restaurant town, and one of the best ways to explore all the different possibilities is to take advantage of the many great happy hours. Some of the city's finest establishments offer drink specials, discounted appetizers, and a great atmosphere to sample their fare without committing to a meal. Here are some of the best happy hour deals out there:

Manuel's: With two locations, one downtown, and one in the Arboretum, Manuel's is famous for their high quality Tex-Mex in fun and festive atmosphere. Their half-price appetizers include some of the best ceviche in town, chicken mole, sautéed mushrooms, guacamole, and more. (310 Congress and 10201 Jollyville, Austin // HH 4-6 daily)

Eddie V's: Also with a downtown and an Arboretum location, Eddie V's focus on fresh fish is evident, even in their happy hour specials. Oysters always shine here, whether on the half shell or broiled, and their crab cake is justifiably famous. Tuna tartare and lobster bisque are among the other happy hour items. (301 East 5th Street Austin, TX 78701 // HH 4:30 - 6)

McCormick & Schmick: Although this is a chain, their Austin outpost is a popular downtown destination, and their happy hour is legendary. Oyster shooters, steamed mussels and ceviche are offered at insanely low prices, and the ½ lb cheeseburger is one of the best deals around. Spinach and artichoke dip, chicken satay and hot wings are also available, although the menu changes periodically. (401 Congress Avenue Austin, Texas 78701 // HH 5-7)

Kyoto: One of the better and more popular sushi deals in town, Kyoto's happy hour is brief, but incredible. With 2-piece orders of salmon, shrimp, conch, eel, and escolar running less than .00, diners may overlook the other delights, including savory yakitori and dumplings. (315 Congress Ave Suite 200 Austin, TX 78701 // HH M-S 6-6:45)

Austin Land & Cattle: This venerable Austin institution has a unique and steak-centric happy hour. With half price appetizers, carnivores can indulge in the steak sampler - 2 oz tasting portions of their rib eye, sirloin, and filet mignon. They also offer an upscale take on frito pie, as well as some incredible popcorn shrimp. (1205 North Lamar Blvd. Austin, Texas 78703 // HH M-F 5-7)

Uchi: Although you will most likely need a reservation, the early evening deals at Uchi are always fantastic, and at great prices. Mussels in lemongrass coconut milk broth are heaven, "tako pops" are tender little octopus grilled with a trio of seasonings, and they always feature one of their creative sushi rolls. Try a cold unfiltered sake, and enjoy. (801 South Lamar - Austin, Texas 78704 // HH 5-6:30)

Wink: The wine bar just adjacent to the main restaurant is a sophisticated yet warm room, with a friendly bartender and fantastic deals on appetizers. Wine flights are available, and one of the highlights of the bar menu is the trio of mini-burgers with either brie or foie gras. (1014 N Lamar Blvd Austin, TX 78703 // HH M-F 5-7)

Recipes for Grilled Canadian Burgers With Grilled Peaches Dessert

!±8± Recipes for Grilled Canadian Burgers With Grilled Peaches Dessert

This past weekend I thought I'd create a burger in honor of my
friends to the North. I got some Canadian bacon and some McCormick®
Grill Mates® Roasted Garlic Montreal Steak® seasoning and I thereby
dubbed these burgers "Canadian Burgers." These burgers turned out
mighty fine if I do say so myself.

The grilled peaches dessert is a great thing to do on the grill right after you take the burgers off. It might seem odd that black pepper would be used in a dessert recipe, but trust me, it won't taste like you would expect it to, and the pepper is an important layer of flavor. The taste will be rich and fruity with an aroma of the great outdoors. A scoop of vanilla ice cream served beside it makes the perfect dessert for your cookout.

CANADIAN BURGERS

Ingredients:

3 lb. ground beef

1 egg, beaten

1/3 cup soy sauce

1 tbsp. Worcestershire sauce

2 tsp. McCormick® Grill Mates® Roasted Garlic Montreal Steak® seasoning

1 tsp. Lawry's® seasoned pepper (or black pepper)

8 slices Canadian bacon

8 slices of your favorite cheese

8 hamburger buns

Instructions:

In a small bowl, beat the egg thoroughly. In a large bowl, with
your hands, gently blend the egg into the ground beef. Grill the
burgers, drizzling the soy sauce and Worcestershire sauce and
sprinkling the seasonings on each side while grilling. When the
burgers are almost done, put the Canadian bacon slices on the grill (preferably a charcoal grill)
for a few minutes on each side. Put the slices of cheese on
top of the burgers and continue grilling until they melt a bit.
Then put a slice of the Canadian bacon on each burger and serve the
burgers in the buns. Serves 8.

GRILLED PEACHES DESSERT

Ingredients:

4 ripe peaches

6.5 oz. white wine

6 oz. maple syrup

Freshly ground black pepper (enough to sprinkle lightly on all peach halves)

Instructions:

Mix the wine and maple syrup in a shallow baking dish. Cut the peaches in half and remove pits. Lay the peach halves flat-side-down in the wine and syrup and soak for at least an hour. Place halves on grill round-side-down and sprinkle flat side pretty well with fresh ground black pepper. Allow the peaches to grill until you get some black grill marks on the skins. Flip over flat-side-down until grilled thoroughly. Serves 4 to 8.
